Salmon En Croute
This recipe is big on elegance, flavor, and wow factor. Luckily, it’s also low on effort! Salmon en croute is just a French way of saying “in a crust,” which happens to be puff pastry in this case. A cheesy, garlicky, spinach mixture is the perfect balance to a tender salmon fillet. Everything is nestled together in the dough, and after about 30 minutes in the oven, you’ll have a buttery, flaky crust with perfectly tender salmon inside. Ingredients:
- 2 salmon fillets (about 6 ounces each), skin removed
- 1 sheet puff pastry, thawed
- 1 cup spinach leaves
- 1/2 cup ricotta cheese
- 1 tablespoon chopped fresh dill
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
Directions:
- Preheat your oven to 400°F (200°C).
- Season the salmon fillets with salt and pepper. Set aside.
- On a lightly floured surface, roll out the puff pastry into a rectangle large enough to wrap the salmon fillets.
- In a bowl, mix together the spinach, ricotta cheese, chopped dill, Dijon mustard, salt, and pepper.
- Spread half of this mixture in the center of the puff pastry in the shape of the salmon fillets.
- Place the seasoned salmon fillets on top of the spinach mixture.
- Spread the remaining spinach mixture over the salmon fillets.
- Fold the puff pastry over the salmon, sealing the edges by pressing with your fingers.
- Brush the pastry with the beaten egg for a golden finish.
- Place the assembled Salmon En Croute on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and the salmon is cooked through.
