Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine shrimp, potatoes, corn, kielbasa, bell pepper, onion, garlic, beer, diced tomatoes, Cajun seasoning, and olive oil. Season with salt and black pepper to taste.
  3. Divide mixture evenly among 4 large pieces of aluminum foil. Fold the sides of the foil up to create a sealable pouch, leaving some room at the top for steam to vent.
